The mountain “scovergi” recipe
‘Scoverga’ is a kind of pie made from (leavened) dough, fried in fat (and filled with cheese, curd, etc.). This is easy to make and absolutely delicious.
In the past, mountain “scovergi” were indispensable at holiday or Sunday meals. Today, in addition to the generous layer of sugar with which the cakes are dusted, housewives also add chocolate cream, vanilla, or sweet cheese.
Ingredients:
500 g of flour
300 ml of milk
5 g dry yeast
25 g butter at room temperature
20 g of sugar
a pinch of salt
icing sugar
Method of preparation:
Heat the milk over low heat. Before it starts to boil, pour it into a large bowl. Add salt, sprinkle half of the amount of flour. Knead the dough until it becomes a homogeneous composition.
In a small bowl, rub the yeast well with the sugar, then add the resulting composition to the bowl with the dough. Knead again, until the dough becomes elastic and a little shiny. Cover the bowl with plastic wrap. Let the dough rest in a warm place for half an hour.
After the dough has risen, incorporate the remaining flour and melted butter. You will get a very elastic shell. If it is sticky, you can add another 2 tablespoons of flour.
Wrap the ball of dough in plastic wrap and let it rise for at least another hour.
When the time has passed and the dough has risen, with the help of a rolling pin, spread the cake on the work table covered with flour and divide it into 8 equal pieces. Form balls from the dough, cover them with a clean napkin and leave them to rise for another half hour.
Shape the balls of dough with the palm of your hand, so that they take the shape of cakes.
Fry the “scovergi” in the pan full of hot oil, then remove them to a plate and roll them in caster sugar.
